Hi,
How can I enter a greater-than symbol in a latex expression in an nLab page? When I do it in the usual way I get the error ’unknown character’. 15 minutes of looking at help pages has not enlightened me.

Use \lt
and \gt
instead. It seems that angle brackets get misinterpreted as XML.

The documentation of how to in the nLab is rather hit and miss.
I’ve sometimes just resorted to finding an example in the nLab or nForum.
For your case, the page preorder contains the text:
A preorder (also sometimes called a quasi-order, especially if one works with instead of ) …
If you just copy and paste part of that (at least in FIrefox) you get the text:
with <\lt instead of ≤\leq
which gives the rendering followed by the underlying iTeX.
Also, if you want to do tests to figure out how to get some rendering, the nForum is often better than the nLab because it does give previews and you don’t have to click Add your comments
while the nLab requires Submit
to see the rendering.
Fortunately, the nLab is a wiki, including its self-documentation. So once you figure something out, you can improve the documentation yourself for the benefit of future editors! (-:
